Baked fish with olives and red peppercorns served with guacamole mash.

This has to be one of the easiest dishes I have made and really quick. I made the guacamole mash because I had 2 ripe avocados that needed eating but you could use a tub of ready made guacamole if you were short on time. 14803136_10153800901216290_909557204_o

Serves 4

  • 4 white fish fillets (Cod, Hake, Haddock)
  • 200 ml dry white wine
  • 200g green olives
  • 2 tsp capers
  • 1 lemon sliced
  • 2 tsp red peppercorns – ground
  • 2 tbs olive oil
  • 1 tsp dried parsley
  • salt and pepper
  • 1kg potatoes
  • 2 ripe avocado
  • 1 large firm tomato skinned and de-seeded
  • 1 spring onion very finely chopped
  • 3-4 drops of Tabasco

Greek Lamb Tray Bake

I love one pot meals and tray bakes in particular because the wide canvas gives you an opportunity to provide a wow factor when you bring it to the table. This was my first attempt using Lamb and it was wonderful. I have since made it again and added courgettes which was equally delicious.
