This has to be one of the easiest dishes I have made and really quick. I made the guacamole mash because I had 2 ripe avocados that needed eating but you could use a tub of ready made guacamole if you were short on time.
Serves 4
- 4 white fish fillets (Cod, Hake, Haddock)
- 200 ml dry white wine
- 200g green olives
- 2 tsp capers
- 1 lemon sliced
- 2 tsp red peppercorns – ground
- 2 tbs olive oil
- 1 tsp dried parsley
- salt and pepper
- 1kg potatoes
- 2 ripe avocado
- 1 large firm tomato skinned and de-seeded
- 1 spring onion very finely chopped
- 3-4 drops of Tabasco
